Al’s therapy program requires the entire family to follow a very strict and restrictive diet. This diet has been found to encourage neurological development and greatly reduce complications such as digestive problems and seizures which are common to Al’s syndrome. They must only eat fresh, organic, local foods. They cannot eat any wheat, dairy, soy, peanuts, citrus or tomatoes. In order to keep up with this, they are doing a lot of cleaning, cutting and freezing of local produce in order to freeze it while it is fresh. This happens in Al’s home.
